21 DAY FIX RECIPES: Holiday Brussel Sprouts
If you’re anything like me, you used to hate brussel sprouts as a kid and now you can’t get enough. This 21 Day Fix recipe from Autumn may be called Holiday Brussel Sprouts, but I could eat them all year long!
Before we get started, I want to talk a little bit about the health benefits of brussel sprouts. Brussels sprouts are a wonderfully healthy cruciferous vegetables (like broccoli and cabbage) that you should eat 4-5 times a week…because they do this:
- Lower cholesterol
- High in Vitamins A and C (antioxidants)
- Prevent cancer
- Anti-inflammatory (due to high levels of Vitamin K and Omega 3s)
- Support detoxification
- Promote cardiovascular health
- Support digestive system
You want them to be firm, tight, and bright green. They’re available year round, but you’ll see more of them from autumn until early spring. Store unwashed and untrimmed Brussels sprouts in a plastic bag in the veggie drawer for up to 10 days.You get the most health benefits if you steam them without overcooking them.
- 1 Green Brussel sprouts
- 1/2 Purple cranberries
- 1 Blue gorgonzola cheese (crumbled)
- 1 Orange walnuts
- 1 Tbs balsamic vinegar
- 1 tsp olive oil
- sea salt and pepper (to taste)
- Heat brussels sprouts, cranberries, and olive oil in a skillet over medium heat.
- Season with salt & pepper and cook for 8-10 minutes.
- Add balsamic vinegar. Stir to coat and remove from heat.
- Toss mixture in a large bowl and top with gorgonzola.
