Meatballs do not have to be a chore to make and Insanity recipes can be absolutely delicious!
This is another one of the Insanity recipes that you can whip up quickly. You can make a single serving or make a big batch and freeze them. (Because we believe leftovers are your friends, we highly suggest the latter.)
For those of you doing Insanity, this is recommended for Meal 5 and can be easily modified to increase the calories. And, as with all of our recipes, it works for a variety of programs or anyone just wanting to eat it CLEAN.
If your grocery store doesn’t carry pre-packaged ground chicken, as the butcher to grind up some breasts for you. Or, you can just use lean ground turkey.
A little note about the side of whole grain pasta that’s served up with the meatballs in this Insanity recipe…
- Whole grain (or whole wheat) pasta is made from flour that contains the entire grain kernel, the germ, endosperm and bran.
- It’s packed with more nutrients than regular pasta, specifically B vitamins and minerals.
- High levels of dietary fiber helps “regularity” and are purported to lower cholesterol and blood sugar, prevent cancer, and assists with weight management.
- Whole grain pasta is a complex carbohydrate-rich food (about 37g in one cup of pasta), which is the preferred source of energy for your muscles, red blood cells and nervous system.
- 3 ounches lean ground chicken
- 1 egg white
- 1 Tablespoon seasoned bread crumbs
- 1/2 cup whole-grain pasta (cooked)
- 1/2 cup tomato sauce
- 1 cup green beans (steamed)
- Mix ground chicken with egg white and seasoned bread crumbs.
- Form mixture into small meatballs, place on a baking sheet, and bake at 375 F for 15-20 minutes, or until cooked through.
- Toss meatballs with tomato sauce and pasta and serve with the steamed green beans.
* For a 400 calorie meal, simple add 2 oz more chicken breast, 1 Tbs more bread crumbs, and use a total of 2/3 cup pasta.
