Shakeology Pumpkin Energy Balls
Here is yet another healthy way to satisfy your pumpkin craving this fall! These Shakeology Pumpkin Energy Balls are a GREAT grab and go healthy snack that I bet your kids will also love. I also take them with me when I go hiking or camping because they both give me energy and hold me over.
The amount of energy balls depends upon how big or small you make them. This recipe will make a good sized batch for two to four people. If it’s just for you, start by cutting the recipe in half.
This is one of those recipes you can get creative with—you could easily add some nut butter, nuts, chia seeds, raw cacao nibs, etc. You can also change up the flavor of Shakeology and have an entirely different flavor—like chocolate and nut butter, for instance. Have fun!
- 1 cup dry old fashioned rolled oats
- 1/2 cup pumpkin pureé
- 1/3 cup honey (can replace with stevia to taste)
- 1 cup coconut flakes
- 1/2 cup ground flaxseed
- 1 serving Vanilla Shakeology
- 1 tsp vanilla - ingredient
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- Mix all ingredients together.
- Use a cookie scoop or spoon to portion out the mixture and roll into balls (whatever size you want). Place on a cookie sheet lined with parchment paper.
- Refrigerate for at least 30 minutes. Store in fridge or freezer.
