This is a super easy Sweet Potato Omelet recipe that’s packed with protein and nutrients.
Sweet potatoes are one of our favorite healthy foods. Here are just a few of their nutritious benefits:

And, they’re incredibly versatile. You can use them in salads, soups, as a main or side dish, and as a tasty ingredient in dishes like this.

- 1/2 cup sweet potato (cut into small cubes)
- 1/4 cup kale (chopped)
- 1/4 cup broccoli (chopped)
- 3 eggs (beaten)
- salsa (optional; to taste)
- Soften up the kale, broccoli, and sweet potatoes with a little coconut oil and water in a small skillet on the stovetop.
- When done, remove the pan from the heat and set aside drained veggies in a small bowl.
- Wipe the pan clean, add a little more coconut oil, heat just until hot, and pour in the pre-beaten eggs. Cover.
- Once the eggs are set, add the veggies.
- Fold it in half and serve. If you want, top with some salsa.
